Double Chocolate Energy Bites

What’s full of fudgy, sweet, chocolatey goodness? These Double Chocolate Energy Bites, of course! Every bite is studded with chewy oats, sweet dates, rich chocolate chips, and a slight crunch from the almonds and chia seeds. This is definitely a fun and easy recipe to make if you want ready-to-eat bite-sized snacks waiting for you in the fridge!

Ingredients

  • 20 Dates, pitted
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 cup Cacao Powder
  • 1/2 cup Oats, rolled, gluten-free
  • 1/2 cup Almonds
  • 1 tbsp Chia Seeds

Directions

Soak the dates in water for 5 hours, then drain, discarding the water.

In your Tall Cup, add the soaked dates, pure maple syrup, vanilla extract, and cacao powder. Blend until completely smooth.

Scoop the mixture into a bowl and stir in the oats, sliced almonds, chia seeds, and mini chocolate chips if using. Stir until the mixture is completely even. Cover and refrigerate overnight.

Line a cookie sheet with parchment paper. Use a cookie scoop to portion the mixture out onto the cookie sheet. Freeze uncovered for 30 minutes, then roll into balls.
