Creamy Corn and Basil Soup

Corn, basil, and onion blend together to create a tasty soup perfect for the transition from summer to fall. Summer corn blends with spices and herbs to create a slightly sweet soup that keeps your taste buds happy.

Ingredients

  • 3 cup Corn, kernels
  • 1/2 cup Basil
  • 1/2 Onion, raw
  • 1/2 Avocado
  • 1 tbsp Lemon Juice
  • 2 Garlic, clove
  • 1/2 tsp Turmeric, ground
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper, ground
  • 1 cup Vegetable Broth, low-sodium
  • 1 1/2 cup Almond Milk, unsweetened
  • 2 tbsp Chives, raw

Directions

Place all ingredients except for the chives inside the nutribullet Rx soup pitcher, and extract on the 7-Minute Heated Cycle.

Alternatively, blend all ingredients in the blender until smooth, transfer the soup into a pot, and heat over the stove until warm.
