Peanut Butter Energy Bites are super easy to make, and this recipe calls for just five simple ingredients – soft dates, rich peanut butter, comforting oats, healthy chia seeds, and a splash of vanilla. These are the perfect energy-boosting treats to have in the fridge for a quick breakfast on-the-go or a healthy midday snack.

In your nutribullet cup, pulse 1 cup of oats to a coarse powder and set aside.

Pulse soaked dates, peanut butter, water, and vanilla extract. Blend until completely smooth.

In a medium bowl, add all ingredients and mix to combine.

Roll into bite-sized balls, roughly 1-inch in diameter.

Place bites on a baking tray or pan and chill in the fridge for 1 hour.

Transfer to an airtight container once hardened.
