These are the perfect energy-boosting treats to have in the fridge for a quick breakfast on-the-go or a healthy midday snack.
- 15 Dates, pitted
- 1/4 cup Peanut Butter, creamy, unsalted
- 2 tbsp Water
- 1 tsp Vanilla Extract
- 1 cup Oats, rolled, gluten-free
- 1 tbsp Chia Seeds
- 1/8 tsp Sea Salt
Soak the dates in water for 5 hours, then drain, discarding the water.
In your Short Cup, add the soaked dates, peanut butter, water, and vanilla extract. Blend until completely smooth.
Scoop the mixture into a bowl and stir in the oats, chia seeds, and salt. Stir until the mixture is completely even. Cover and refrigerate overnight.
