Watercress and Herb Soup

Watercress is an underrated green that is packed with nutrients and gives a nice spicy zing to your soup. Changing up your greens is a great way to incorporate different vitamins and minerals into your diet, and enjoying a bowl of hearty soup is an easy and delicious way to do it!


  • 3 cup Watercress, raw
  • 1 Red Potato, small
  • 2 Garlic, clove
  • 1 tsp Thyme, dried
  • 1 tsp Rosemary, fresh
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper, ground
  • 1 cup Almond Milk, unsweetened
  • 2 cup Vegetable Broth, low-sodium

Alternatively, blend all ingredients in the blender until smooth, pour the soup into a pot, and heat over the stove until warm.
