Directions

Preheat the oven to 200 C or 400 F.

Spread tomatillos, jalapeno, and garlic cloves on the baking sheet. Drizzle with olive oil and roast in the oven for 20 minutes. Allow to cool completely.

Add cilantro, garlic, jalapeno, tomatillos, water, lime juice, salt, and pepper to the work bowl. Run for 20 seconds.

Remove salsa from the work bowl and transfer it to a serving bowl.

Add red onion to the food processor bowl and run for 5 seconds.

Mix diced onion into salsa and serve.
