Brew, chill and cover 4 oz of coffee for at least 4 hours.
Add oats, dates, and almonds to a food processor and pulse together until they form sticky clumps. Add espresso and pulse just to combine, taking care not to overmix.
Form mixture into nine bite-sized balls about 1-inch in diameter each.
Chill in the fridge for 1 hour. Store in an airtight container in the refrigerator once hardened.
