Set oven or air fryer to 400°F. In a bowl, toss tomatoes and garlic in 1 tablespoon of olive oil and sprinkle with salt and pepper. Transfer to a baking sheet or air fryer basket and roast for 15 minutes.
Set up the Food Processor Work Bowl and attach the Chopping Blade. While the tomatoes and garlic cook, add feta, remaining olive oil, lemon juice, and Italian seasoning to the Food Processor and process on HIGH until smooth.
Add in 1/4 cup of roasted tomatoes and process using the DIP program until desired consistency is reached.
Transfer the feta blend to a serving bowl and top with remaining roasted tomatoes.
