Ingredients

Cashews, raw - soaked in hot water for 20 minutes and drained

1 cup

Water

1/3 cup

Olive Oil

2 tbsp

Lemon Juice

Cilantro - lightly packed, stems removed

1 cup

Parsley - lightly packed, stems removed

Vinegar, white wine

1/2 tsp

Salt

1/4 tsp

Black Pepper, ground

Perfect as a salad dressing, sauce, or dip, this cool and creamy all-star adds freshness and brightness to just about everything. It's also dairy-free, making it great for sensitive systems and plant-based palates alike.

Directions

Add the cashews and water to the Work Bowl and process until smooth, about 1 minute.

Add the olive oil, lemon juice, garlic, cilantro, parsley, green onions, vinegar, salt and pepper. Process until very smooth, about 2 minutes, scraping down the sides as needed.

Transfer to an airtight container and refrigerate for up to 7 days.
